Rhubarb Strawberry Streusel Pie

Line a pie plate with your favorite recipe for pie crust. 
Mix together : 
  • 4 cups rhubarb, chopped
  • 2 cups strawberries, sliced
In a separate bowl combine :
  • 1 cup sour cream 
  • 1 1/2 cups sugar
  • 1/3 cup flour
Pour over the Rhubarb and strawberries.
Top with Streusel :
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1/4 cup hard margarine or butter
Bake at 450 degrees for 10 minutes then turn the temperature down to 350 and continue to bake for another 30-40 minutes until the topping is a golden brown.
