Makes 6 servings
Ingredients:
8 to 10 ribs of celery
3/4 cup blue cheese, crumbled (about 3 ounces cheese)
1/4 teaspoon sea salt
black pepper, coarsely ground
1 tablespoon extra virgin olive oil
Directions:
Cut the celery crosswise into 1/2" thick pieces to make 4 cups sliced.
Place it in a pretty bowl and sprinkle in crumbled blue cheese.
Add the salt, pepper, and olive oil and toss well.
Serve chilled. Enjoy!
