I saw this recipe today and wanted to save it. I have no idea how well it will work.
Yeast
1 unpeeled medium potato
4 Cups warm water
1 tsp Salt
1 tsp Sugar
1 quart jar with a lid

Rinse tater, don't scrub
Cut into pieces
Cook until done
Drain..Save potato water
Mash taters
Add Sugar and Salt
Mix all together
Allow mixture to cool to room temp
Add potato water to tater mash, until whole mixture equals 1 quart
Cover and let sit in a warm place and allow to ferment for several days ( around 7 days ).
